More about Noni... The Noni
fruit is rather interesting. First it starts out tiny and
green with several buds and tiny white flowers on the fruit.
As the green fruit grows, the flowers drop off and the bumps start
to smooth out. The fruit then yellows from the stem toward the
end of the fruit. When the fruit is completely yellow, it is
prime for picking.

After the yellow fruit is picked, the yellow becomes white and the
fruit becomes pungent and squishy. This is due to the active
enzymes in the Noni fruit that breaks down its cellular walls.
Tip: The enzymes that break down the
cellular walls in the Noni fruit during ripening are the same
enzymes that aid the digestive system in breaking down foods and
enhances the absorption of nutrients. If a green
fruit, or partially green fruit is picked, the green part becomes
hard and rubbery. This is very bitter and harder to juice.
Because we strive to make our Noni Juice as "sweet" as possible, we
juice completely yellow and white fruit. After a few weeks,
the fruits become very soft and submersed in their own juice.
It is then juiced, filtered, pasturized, and bottled for your
